I made rose syrup this weekend. It's really simple to do. I'm going to use it for making soda, marshmallows for summer s'mores and rock candy. And I'm going to experiment with making a rose-peppercorn bbq sauce for lamb. I think the kids will love the soda and candy though. I don't use food colouring because the roses will color the syrup, can't wait to try it with my lavender roses. Here is the recipe:
6 cups sugar
2 cups water
2 cups rose petals (from the garden or and organic source, do not use any rose that has been sprayed with anything)
Put everything in a large pan
Boil for about ten minutes
Boil for about ten minutes
Strain and let cool and store in the fridge for about a week or two.
I let the left over rose petals dry and eat them as a candy.
